Ingredients
- 6 large eggs
- ¾ cup cottage cheese
- ½ cup shredded cheese (cheddar, mozzarella, or mix)
- Salt and pepper to taste
- Optional mix-ins: spinach, turkey bacon, peppers, mushrooms
Instructions
Preheat oven to 325°F and grease your muffin tin or silicone mold.
Blend eggs, cottage cheese, salt, and pepper until smooth.
Fold in shredded cheese and add-ins.
Pour into molds, filling each ¾ full.
Bake for 25–30 minutes or until set in the center.
Let cool before removing. Enjoy warm or store for later!
