Description

These fluffy cottage cheese egg bites are a quick, high-protein, low-carb breakfast you can bake in under 30 minutes. Perfect for meal prep, they’re creamy, customizable, and ideal for clean eating or weight loss.


Ingredients

  • 6 large eggs
  • ¾ cup cottage cheese
  • ½ cup shredded cheese (cheddar, mozzarella, or mix)
  • Salt and pepper to taste
  • Optional mix-ins: spinach, turkey bacon, peppers, mushrooms


Instructions

  • Preheat oven to 325°F and grease your muffin tin or silicone mold.

  • Blend eggs, cottage cheese, salt, and pepper until smooth.

  • Fold in shredded cheese and add-ins.

  • Pour into molds, filling each ¾ full.

  • Bake for 25–30 minutes or until set in the center.
