Ingredients
- 6 Yukon Gold potatoes, diced
- 4 hard-boiled eggs, chopped
- ¾ cup mayonnaise
- 1 tbsp yellow mustard
- 2 tsp pickle relish
- 1 tsp apple cider vinegar
- Salt & pepper to taste
- ½ cup chopped celery
- ¼ cup red onion
Instructions
Boil potatoes until tender, then cool.
Prepare and chop eggs.
Mix dressing ingredients.
Fold everything together.
Chill before serving.

- For Extra Protein: Add grilled chicken, chopped turkey bacon, or white beans. Lighter Version: Replace half the mayo with Greek yogurt to reduce fat and increase protein.
