Ingredients

  • 6 Yukon Gold potatoes, diced
  • 4 hard-boiled eggs, chopped
  • ¾ cup mayonnaise
  • 1 tbsp yellow mustard
  • 2 tsp pickle relish
  • 1 tsp apple cider vinegar
  • Salt & pepper to taste
  • ½ cup chopped celery
  • ¼ cup red onion


Instructions

  1. Boil potatoes until tender, then cool.

  2. Prepare and chop eggs.

  3. Mix dressing ingredients.

  4. Fold everything together.

  5. Chill before serving.

Pro Tip: Add Greek yogurt or grilled chicken for a high-protein upgrade!

Notes

  • For Extra Protein: Add grilled chicken, chopped turkey bacon, or white beans. Lighter Version: Replace half the mayo with Greek yogurt to reduce fat and increase protein.
