Ingredients

  • 1 ¾ cups all-purpose flour (or white whole wheat)
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 ½ tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ground cloves
  • ¼ tsp allspice
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • ½ cup vegetable oil (or half oil + applesauce)
  • ¼ cup milk (dairy or plant-based)
  • 1 tsp vanilla extract
  • Optional: ⅓ cup chopped walnuts or chocolate chips
  • Topping: Pepitas (pumpkin seeds)

 


Instructions

  • Preheat your oven to 350°F (175°C).

  • Grease or line a 9×5-inch loaf pan with parchment paper.

  • In a large bowl, mix flour, baking soda, baking powder, salt, and spices.

  • In a separate bowl, whisk eggs, both sugars, oil, pumpkin puree, milk, and vanilla.

  • Combine the wet and dry mixtures until just incorporated (don’t overmix).

  • Fold in any add-ins like chocolate chips or nuts.

  • Pour the batter into the loaf pan and sprinkle with pepitas.

  • Bake for 55–60 minutes or until a toothpick comes out clean.

  • Cool for 15 minutes, then transfer to a wire rack. Slice and enjoy!
