Ingredients
- 1 ¾ cups all-purpose flour (or white whole wheat)
- 1 cup granulated sugar
- ½ cup brown sugar
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 ½ tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp ground cloves
- ¼ tsp allspice
- 2 large eggs
- 1 cup canned pumpkin puree
- ½ cup vegetable oil (or half oil + applesauce)
- ¼ cup milk (dairy or plant-based)
- 1 tsp vanilla extract

- Topping: Pepitas (pumpkin seeds)
Instructions
Preheat your oven to 350°F (175°C).
Grease or line a 9×5-inch loaf pan with parchment paper.
In a large bowl, mix flour, baking soda, baking powder, salt, and spices.
In a separate bowl, whisk eggs, both sugars, oil, pumpkin puree, milk, and vanilla.
Combine the wet and dry mixtures until just incorporated (don’t overmix).
Fold in any add-ins like chocolate chips or nuts.
Pour the batter into the loaf pan and sprinkle with pepitas.
Bake for 55–60 minutes or until a toothpick comes out clean.
